Ingredients for the Biryani:
- 1/2 (1) cups Basmati rice
- 2 cups mixed vegetables (carrots, beans, potatoes, peas), chopped
1 large onion, thinly sliced - 2 tomatoes, chopped
- 1/4 cup plain yogurt
- 2 tablespoons SitaVatika Biryani Masala
- 1 tablespoon SitaVatika Garam Masala
- 1 teaspoon SitaVatika Red Chilli Powder
- 1 teaspoon SitaVatika Kashmiri Red Chilli Powder (for color)
- 1 teaspoon SitaVatika Turmeric Powder
- 1 tablespoon ginger-garlic paste
- 2 tablespoons cooking oil
- 1 teaspoon cumin seeds
- 4-5 cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- Salt for taste
- Fresh coriander leaves, chopped (for garnish)
- Fresh mint leaves, chopped (for garnish)
For the Rice:
- 1/2 (1) cups Basmati rice
- 2-3 cups water
- 1 teaspoon salt
- 1 tablespoon cooking oil
Instructions
1. Prepare the Rice:
Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
In a large pot, bring 2-3 cups of water to a boil. Add the soaked rice, salt, and cooking oil. Cook until the rice is 70% cooked (parboiled). Drain and set aside.
2. Prepare the Vegetables:
Heat oil in a large pan over medium heat. Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Sauté until fragrant.
Add sliced onions and cook until golden brown.
Stir in the ginger-garlic paste and cook for a minute.
Add chopped tomatoes and cook until they soften and blend into the mixture.
Mix in SitaVatika Turmeric Powder, Sita Vatika Red Chilli Powder, and Sita Vatika Biryani Masala. Cook for a few minutes.
Add SitaVatika Kashmiri Red Chilli Powder for that perfect vibrant color and subtle spiciness.
Add the chopped mixed vegetables and cook until they are tender.
Stir in the yogurt and Sita Vatika Garam Masala. Cook for a few more minutes to combine the flavors.
3. Layer the Biryani:
In a heavy-bottomed pan or a biryani pot, spread a layer of the partially cooked rice.
Top with a layer of the cooked vegetable mixture.
Repeat the layers, finishing with a layer of rice.
Sprinkle fresh coriander and mint leaves on top.
4. Dum Cooking (Steaming):
Cover the pot with a tight-fitting lid. Cook on low heat for 15-20 minutes to allow the flavors to meld and the rice to fully cook.
Remove from heat and let it rest for 5 minutes before opening the lid.
5. Serve: Gently fluff the biryani with a fork and serve hot. Garnish with additional fresh coriander and mint leaves if desired.
